Add symfony/process ^8.0 support
Bump pestphp/pest to ^2.16|^3.0 for PHP 8.5 compatibility
Add PHP 8.5 to CI test matrix
Drop PHP 8.1 (Pest v2 can no longer resolve dependencies on PHP 8.1 — CI was already failing on main)
Bump minimum PHP to ^8.2
Update test snapshots (newer MJML adds aria-roledescription and role attributes)
