docs: add info about testing with different versions and the rosetta setup for Mac

In the node-mongodb-native repo, we talk about run-orchestration.sh just in this readme file, so I think these comments are relevant here. It's where developers will go to figure out how to run tests, so it makes sense to talk about how to run different flavors of tests.

drivers-evergreen-tools has the information about version, so I can add the note about Rosetta there. Should that be a separate PR?

That seems like an oversight. .evergreen/run-orchestration.sh is just a wrapper around https://github.com/mongodb-labs/drivers-evergreen-tools/blob/master/.evergreen/run-orchestration.sh - it seems like we should just link to drivers-evergreen-tools' run-orchestration script instead of including any documentation ourselves.

Maybe we could update https://github.com/mongodb-labs/drivers-evergreen-tools/blob/master/.evergreen/run-orchestration.sh to document the ARCH flag, and update our documentation to just point to https://github.com/mongodb-labs/drivers-evergreen-tools/blob/master/.evergreen/run-orchestration.sh?
