Adding ROIs to Parsed Metadata

Addressing #913

Background

This PR adds ROI (Region of Interest) functionality to Viv by extending the OME-XML parsing logic.
With this change, ROI elements defined in OME-XML can be extracted and made available in Viv’s data model, allowing downstream tools to render and interact with ROI annotations.

• Extended types/interfaces to include ROI data structures.
• Updated documentation to note ROI support.
