Fix broken Choreo Connect documentation links

Description

For the 4.1.0 and 4.2.0 branches in this repo, the following needs to be fixed:

1. The links in the following locations are broken (both locations below have the same link):

• https://github.com/wso2/docs-apim/blob/4.2.0/en/docs/deploy-and-publish/deploy-on-gateway/choreo-connect/message-transformation/interceptor-microservice/interceptor-microservice.md?plain=1#L9
• https://github.com/wso2/docs-apim/blob/4.2.0/en/docs/deploy-and-publish/deploy-on-gateway/choreo-connect/message-transformation/message-transformation-overview.md?plain=1#L9

This should point to https://raw.githubusercontent.com/wso2/product-microgateway/refs/heads/cc-main/resources/interceptor-service-open-api-v1.yaml instead.

2. The anchor tag in the line https://github.com/wso2/docs-apim/blob/4.2.0/en/docs/deploy-and-publish/deploy-on-gateway/choreo-connect/message-transformation/defining-interceptors-in-an-open-api-definition.md?plain=1#L18 does not correctly redirect to the proper heading in the same page.

3. The link in https://github.com/wso2/docs-apim/blob/4.2.0/en/docs/deploy-and-publish/deploy-on-gateway/choreo-connect/message-transformation/defining-interceptors-in-an-open-api-definition.md?plain=1#L19 should point to https://github.com/wso2/product-microgateway/blob/cc-main/samples/openAPI-definitions/interceptors_sample.yaml

Steps to Reproduce

Refer to the above documentation pages and try to click the links currently there; they either redirect to 404 pages or do not do anything (in the case of 2.)
