Select and implement an analytics toolset to track application usage

1. look for an open-source tool-set to track how users are using squirrel.
2. come up with what data we should be tracking and how that data is relayed to us.
3. form a plan to integrate the tool into squirrel
4. implement the plan

Two potential solution is to use SLAC's Message Log System (Loki + Promtail + Grafana) or Splunk both are available to us already. Message Log System is up and running while Splunk would take some set up and potentially some funding requests: https://uit.stanford.edu/service/splunk

With Message Log System we could follow a process like:

1. Emit structured JSON logs from Squirrel's backend (e.g., {"event": "page_view", "page": "/config", "user": "...", "session_id": "..."})
2. Have Promtail pick them up and push to Loki
3. Build Grafana dashboards for session metrics
