How to bounce?

In my Ruby application I process ALL incoming E-Mails for a certain subdomain. But how can I send back a bounce message when the `mail.to` mailbox doesn't exist on my system anymore? Is the bounce back email just a regular email? Are there any best practices for that? I appreciate any help!
