docs: rebrand mentorAI -> Agentic OS, mentor -> agent

Renames the product (mentorAI -> Agentic OS) and the conversational entity
(mentor/mentors -> agent/agents) across all doc pages and transcripts.
URLs, paths, anchors, and app IDs preserved.
