Add option to disable external API calls

Hi,
at first I want to thank you for your effort, this is great specially the templates and assistant feature
I deployed my instance using your firefly+pico+importer compose
Everything works as expected except that I get Error: timeout of 4000ms exceeded time to time
I looked up the requests, there are two:

• /api/currencies/exchange: which I don't know why it fails (I even increased the timeout limit to see if its because of slowness)
• /api/latest-version: seems like its gonna check for updates and it fails maybe because Im running this in an airgapped environment, is there any option to disable it ?

Hi. Thanks for the suggestion. The latest version request can indeed be an option that could be turned off.
The exchange-rates one needs more investigation since it’s used application wide.
