dataviz CI aborted -- core dumped #130

Lately, the dataviz CI is failing with an enigmatic core dump as in https://github.com/choderalab/drugforge/actions/runs/20869600856/job/59968435966#step:6:881
My guess is that the container is running out of memory when solving the environment, but I'm not sure. We probably need to check if there are ways to mitigate this (check if we can clean up some dependencies for this workflow, for example).
I believe the dataviz package is not critical and probably not that actively developed anymore. Maybe another question is if we want to keep having it in our code base.
