chore: remove binary model files that belong in the main branch

model/yeast-GEM.mat and model/yeast-GEM.xlsx are generated at release time
and only tracked on main; develop does not carry them. They appeared here
because this branch was cut from main. Removing them keeps the merge into
develop from reintroducing ~970 kB of binaries.
