Recreate ICD-11 E2E demo showcase test environment and export results CSV

Recreate the test environment used in the ICD-11 demo showcase (E2E flow) to rerun the scenario and generate a fresh output CSV from OCL Mapper. The goal is to reproduce the previous results and provide an updated export to Jon.
