Fix links to docs in workshop materials

A workshop participant pointed out that the links to documentation in Tutorial 1 (and potentially other places) were broken. These should be checked in all of the lecture/tutorial notebooks and fixed to point to stable docs (https://docs.mdanalysis.org/stable/) so we don't have to update these each time.
