[Docs update] Broken links to be fixed #363

From JRC - Samuel Roeslin

While preparing the slides, I noticed that several links listed under the RDLS Hazard Taxonomies section (https://docs.riskdatalibrary.org/en/latest/rdl/other-standards/#hazard-taxonomies) appear to be broken or outdated. In particular:

UNDRR: Since summer 2025, a new version of the Hazard Information Profiles (HIPs) has been released. The updated version is available here:

https://www.undrr.org/publication/documents-and-publications/hazard-information-profiles-hips-2025-version

EM-DAT: The current link appears to be broken.
An alternative and up-to-date link is:

https://doc.emdat.be/docs/data-structure-and-content/disaster-classification-system/

Munich Re: The existing links currently redirect to the EM-DAT website rather than to Munich Re resources.

We would be grateful if the RDLS webpage could be updated accordingly.
