Helm chart for Polaris is using old (9.6) appVersion

What happened?

The Helm chart shown in the installation instructions for the Polaris Dashboard at https://polaris.docs.fairwinds.com/dashboard/ is using an old appVersion (9.6).

What did you expect to happen?

Helm chart to install latest Polaris binary (10.1.8)

Test Helm chart installation with instructions at https://polaris.docs.fairwinds.com/dashboard
