Support for more transcoding formats

Hey, thank you for the great plugin! Hope you're doing fine.

Currently, it seems only mp3 is supported. Would be great if we could select in the beets configuration file the preferred format for transcoding. Also, when the client exposes the desired format the server could automatically use it.
